A salad with avocado, pomegranate, and candied walnuts. The creamy avocado with the spicy feta, nutty candied walnuts, and fruity pomegranate seeds is not only great to see. It's refreshing, healthy, and really delicious!
With blogging, I have incidentally learned a lot of interesting things. During my previous blog posts with pomegranate (thick yogurt with honey and pomegranate prosecco with cinnamon, I bought a delicious fresh pomegranate. I saw those boxes with pomegranate seeds (where the pomegranate was already deseeded) standing at a supermarket but was thinking that deseed a pomegranate wouldn't have to be that hard. And that you could deseed a pomegranate in probably a minute (at least I thought).

I put my knife in the pomegranate and cleft it into two pieces. while I thought, you see it is not so bad. However, when I pulled the seeds out with my spoon I found out why there are people who buy the pomegranate seeds harvested. Due to the pressure of that spoon on the seeds, a juice flow started to spout out freely in all directions. Luckily I was facing the washable photo in the kitchen (that saved my wall of a pink color), but my white sweater (whom of you does also wear white while cooking without an apron) so my sweater was damaged beyond repair.
Sometimes ready to eat is better
Open the pomegranate and get the seeds out cost only a few minutes, but the cleaning up costed a lot more.
My lesson: if I have another pomegranate I now operate the fruit in the sink, with an apron and gloves. I put a cloth on top (a clean old one, which may get pink) of the fruit. And fortunately, it worked fine! It just takes a few minutes to get the seeds out, just as I expected. But I'm pretty sure that if I have to choose next time I choose the ready to eat pomegranate seeds.
💭 Top tips
- To get the avocado flesh easily from the shell you cut it in with a knife to the pit. Loosen the two halves apart. Remove the pit with a spoon and scoop out the pulp with a spoon. Slice the avocado into strips.
- This salad can make all types of lettuce, but I love mixed salad greens for it has great texture, color, and flavor.
- Keep the pomegranate (seeds) and avocados in the refrigerator until use.
⏲️ Preparation and storage
- In the morning you can wash the lettuce in a sealed box with damp paper stored in the refrigerator;
- The pomegranate seeds can already be removed from the fruit in the morning and stored in a sealed bag in the refrigerator.
- You can roast the walnuts and store them in a sealed bag or box at room temperature.

- 60 grams walnuts
- 4 tablespoons maple syrup
- ¼ teaspoon cayenne pepper
- ⅛ teaspoon salt
Pomegranate vinaigrette
- 80 ml olive oil extra vierge
- 2 tablespoons balsamic vinegar
- ⅛ teaspoon salt
- ⅛ teaspoon pepper

- 150 grams mixed green salad
- 1 avocado
- 75 grams pomegranate seeds
- 100 grams feta crumbled
Notes

Instructions
Candied walnuts
- Preheat the oven to 375 ° Fahrenheit (190 ° Celsius).
- Line a baking tray with baking paper.
- Spread the walnuts on the baking tray and pour some maple syrup on top.
- Flavor with cayenne, salt, and pepper and mix everything well.
- Bake the walnuts for 15 minutes in the oven. Stir halfway time throughout baking, so the walnuts toast evenly.
- Remove from the oven and let them cool down to room temperature.
Pomegranate vinaigrette
- In a small bowl mix the olive oil, pomegranate juice, salt, and pepper.

- Slice the avocado in small strips (in the tips I'll give you a handy method).
- Put the mixed salad in a bowl.
- Add the pomegranate seeds, avocado, and feta.
- Pour the vinaigrette on top and mix everything.
- Sprinkle the candied walnuts on top of the salad and serve.
