What I think is important in cooking is that you can eat the same menu and dishes despite having food allergies. And in particular that you do not have the idea that you get a different dish. In my ideal workshop, everyone eats the same menu , without noticing that it is adapted. And that usually works very well.
Today I made a high tea, where a person suffered a lactose-allergy. A dish in the high tea is Portuguese custard tarts and cookies made with puff pastry. And you probably know that store bought puff pastry contains butter and milk. Two products that contain lactose. So the challenge is to make puff pastry without lactose for this high tea! I’ve adapted the recipe and it worked. And hereby I want to share the lactose-free puff pastry recipe with you. The pastry has the same lightness and taste like normal puff. It is not difficult to make, does not cost a lot of work, the only thing is that the dough needs a lot of rest time so take a day or few days to prepare it!
