This recipe for a sweet quiche with leeks, thyme and spicy smoked mackerel provides a delicious savory pie, which you can eat at dinner, lunch or a buffet.
MONDAY! Yeah and that means a real full agenda with driving to get the kids (and myself) everywhere on time. I can just manage it, if nothing interferes (so please let the train pass through and don’t close the gates when I just arrive). Because it’s Monday fast food is hot! But I just like it when it’s a bit healthy to!
So I made a quiche with leek, old cheese, thyme and smoked mackerel. Together with a salad it stands on my table in less then 30 minutes. When the quiche goes in the oven I prepare a salad with lettuce, walnuts, orange and old cheese. A vinaigrette is poured over the salad to give it a fresh taste. When the quiche is done serve it with the salad (and maybe a baguette). The quiche is also very nice as an appetizer with a seafood buffet.
- This recipe is easily made in a large quiche form. Double the ingredients and add 15 minutes to the baking time (it will become 40 minutes).
- Instead of old cheese, parmesan or brie will be nice.
- you bake the leek in butter, it will become sweeter in taste.
- you brush the sides of the quiche with the egg mixture it will bake nice and brown.
