Deliciously fragrant steak stewed in herbs, vegetables and Guinness. With delicious Cheddar under a layer of puff pastry. And a Jack-O-Lantern decoration especially for Halloween.
Only a few more weeks and then it’s Halloween. How nice is it to adjust your dinner to this wicked theme? On my blog you can already find countless Halloween recipes, all of which are delicious. For dinner, lunch or as a sweet treat. But something can always be added to that, right?
This oven dish is a combination of a delicious autumn recipe with a Halloween twist. The beef is first baked and then stewed in company of delicious herbs, vegetables, Cheddar and Guinness. Due to the puff pastry roof, almost no liquid evaporates and the meat therefor does not dry out and is given plenty of time to absorb the flavors.
And if you don’t have Halloween, you can of course also prepare this recipe. In that case you can replace the Jack-O-Lantern decoration with autumn leaves. Or leave out the decorations if you have limited time.

Guinness and steak
Guinness and steak pie
- 500 grams steak into 2 x 2 cm cubes
- 8 sheets puff pastry
- 3 onions
- 1 sprig rosemary just the needles
- 3 cloves garlic squeezed
- 1 tablespoon butter
- 5 carrots
- 500 ml Guinness beer
- 1 tablespoon flour
- 500 ml beef broth extra if the meat is not covered
- 50 grams Cheddar grated
- 1 egg size S beaten
- edible paint gold or in another color, optional
- Preheat the oven to 180 degrees Celsius
- Heat some oil in the pan.
- Fry the onions until they are glassy, then add the garlic and rosemary.
- Melt 1 tablespoon of butter in the pan and add the celery and carrot.
- Remove everything from the pan with a skimmer and add this to the baking dish.
- Fry the meat in the remaining butter / oil mixture so that it is nicely browned. Then put the meat, including all juices, in the baking dish. Stir everything well.
- Pour in the Guinness and season everything with salt and pepper.
- Mix the flour with the beef broth and pour into the oven dish until the meat is just below.
- Cover the baking dish with a lid or aluminum foil.
- Place the dish in the oven for 2 hours
- Remove the casserole from the oven and stir in half the cheddar cheese
- Sprinkle the other half of the cheddar over the stew.
- Cover the top of the baking dish with the puff pastry. Keep 1 slice of puff pastry behind.
- Make a jack o lantern face out of this and stick it on the puff pastry with the beaten egg (see photo). It doesn't have to be neat.
- If puff pastry is still hanging outside the edge, you can cut it off
- Brush the puff pastry with beaten egg
- Bake the oven dish for another 40 minutes at 180 degrees Celsius in the oven.
- Color in the face with edible paint (optional) for an even nicer effect)
