A tasty budget recipe and healthy too! Penne with smoked mackerel and tomato tapenade.
According to the nutrition center of the Netherlands it is very healthy to eat fish. Fish contains ingredients that can lower blood pressure and prevent cardiovascular disease. And fish also contains a variety of vitamins and minerals that are really good for you. And you only have to eat it once a week to get the desired effect.
I always like to read this kind of stuff when I’ve eaten a super tasty recipe. That it has also been healthy. Two thumbs up.. And because we try to eat in a varied way, fish is on our menu at least once a week.
But fish is not really budget friendly. But you can still make a recipe that is affordable and yet tasty. For example, by taking fish from a can. Such as smoked mackerel fillet. Because of the smoking, this fillet has a little more flavor than tuna or salmon and is therefore super tasty in combination with pasta.
How do you make it
You may ask yourself how you can develop a recipe. I often start with a basis: do I eat fish, meat or choose to go vegetarian. And do I go for a pasta, rice dish or another side dish.
In this case the choice fell on smoked mackerel (which has a delicious salty taste) in combination with pasta. Then I often like to make it a little juicier and that’s where the tomato tapenade comes in. The arugula gives this recipe a little pepper (and you have nicely incorporated your salt and pepper in your dish) and of course vitamins. To supplement these vitamins a little more delicious cherry tomatoes were added (and of course they also combine wonderfully with the tomato tapenade). And because I always want a bite in my recipe and the arugula also has a nutty flavor, I add some pine nuts.
Then the big moment comes, on paper this all seems very tasty, but what how will the big taste turn out? After the first test round, I thought it would even be better to add a slightly acidic flavor to this and the capers came by. But otherwise the recipe was completely correct and we thought it was very tasty. Now I am naturally curious what you think of it? Let me know in the comments!

Recipe penne with smoked mackerel and
Penne with smoked mackerel and tomato tapenade
- 400 grams Penne
- 180 grams Smoked mackerel
- 4 tablespoons red tomato tapenade
- 250 grams cherry tomatoes quartered
- 2 tablespoons capers
- 150 grams arugula
- 1.5 tablespoons pine nuts
- Cook the pasta al dente according to the package and drain
- Drain the mackerel and divide into small pieces.
- Mix the pasta with the tapenade, mackerel, cherry tomatoes and capers.
- Finally, mix in the arugula.
- Spoon on the plate and top the pasta with pine nuts.
