A pasta that has been flavored with pesto and is full of tasty string beans. A seasonal vegetable that is now at its best!
I’m not completely switching to vegetarian food. In fact, I don’t think that eating only vegetarian food is healthy at all. Meat contains vitamins and minerals that we need. And you can’t always gain enough by eating other products.
But we do eat less meat. That’s not new, we’ve always done that. Before the whole hype about eating less/no meat started. Because we’ve got a Dutch proverb saying that to much of anything is never a good idea. And because we’re all unique, that means that what is good for one is a very bad idea for the other.
That does not mean that we never eat vegetarian. Variety is healthy and we’re happy to eat a lot of different kind of recipes each week. So this week we ate vegetarian pasta pesto with string beans. A nice quick meal that is on the table within 15 minutes and you only need one pan. That saves me washing extra dishes after work.
String beans are a real seasonal vegetable. At least if you eat string beans from your own region. In the Netherlands string beans from the Netherlands are available from March to September. You can buy them cut (and that is the variant that is usually here at home) or uncut. And you always store them in the refrigerator until use.
String beans are flatter and a bit stiffer to eat than the green beans that you only cook. Therefore, cut them into small pieces before you prepare them, this way they will cook better. After cutting you can cook, bake or stir-fry string beans. And in todays recipe we cook them with the pasta.

Recipe Pasta pesto with
Vegetarian pasta pesto with string beans
- 500 grams Penne
- 400 grams string beans cut and washed
- 125 grams pesto
- 40 grams pine nuts
- Parmesan cheese to taste
- Bring a pan with sufficient water to the boil.
- Add the penne to the water and cook for 5 minutes.
- Then add the string beans to the pasta and let everything simmer for 4 minutes.
- Drain the pasta / string bean mixture and put everything back in the pan.
- Stir in the pesto and the pine nuts.
- Serve with a tasty salad and Parmesan cheese.
