Enjoy an ice cream with few calories and yet a great taste. And also Vegan too? These mango ice creams with coconut are super quick to make and slim.
In the past you had ice molds where you poured in syrup with water and then let it freeze in the freezer. If you then sucked very hard on it, you would have a chunk of hard ice cream without taste.
Always something was lost, the lid, the stick and then I had to buy new ones. And a deep freezer didn't really help either.
The new ice cream
But in the new ice cream era we have nice molds that you can buy and with which you could make a real magnum (I think that's possible because I haven't tried that yet). With a nice form and a wooden ice stick. Or from those nice calippo ice cream tins. And as a result, I immediately felt like making ice cream myself.
And when I received the Fit box, I decided to keep it a little healthier. So I have a bag of fruit to go (pureed fruit) from Severo mixed with coconut yogurt from Andros. It tasted delicious. And both products are also Vegan too. And although I am not a Vegan, I have decided to make it a vegan recipe for once. Simply because I like these two products after mixing. Not only by vegan label.
Things you freeze need extra sugar (the cold makes it less sweet) and I thought I could add honey. Would that actually be allowed (my vegan challenge at its best), because honey is made by bees. Of course after some searching that is honey isn't a vegan ingredient.
So I went for maple syrup. You know where you get the syrup by making a hole in a tree to let the sap flow out. A quick check as to whether this was permitted in a vegan recipe in the context of tree lovers and, fortunately, fave green light (I hope I will not bump into tree lovers).
The result: a fresh and slightly sweet ice cream. Great for the tasty appetite if you don't want a magnum for once ;-).

coconut yogurt (vegan style)
Mango, apple and passion fruit ice cream with coconut yogurt (vegan style)
- 4 Ice molds
- wooden ice cream sticks
- 180 grams mango, apple and passion fruit puree Vegan (Servero)
- 200 grams coconut yogurt Vegan (Andros)
- 2 tablespoons maple syrup
- In a bowl, mix the fruit puree with coconut yogurt and maple syrup and beat well with the whisk.
- Insert the wooden ice stick through the bottom of the mold. Remove the lid and place the mold directly in front of you.
- Pour the form full with the fruit yogurt and put the lid on it.
- Repeat for all the molds and place in the freezer for at least 3 hours until everything is well frozen
