I use a quiche form for both savory quiches and sweet cakes. I have a few types of quiche forms myself. I've got the spring form quiche forms, which are ideal if you want to serve your quiche on a nice scale. And the porcelain or glass quiche shapes, where you serve your quiche out of the form. Ideal for every dinner.
Both forms work very well and it is therefore very dependent on the goal that you strive for.
The shape is also important!
But not only the type of quiche baking pan is important, you can also vary with the shape of the quiche. Quiche shapes are available in round forms, but also in rectangular shapes. And sometimes that can be very important for the result, as you can see with this maple brownie pecan cake
Quiche shapes are available in different sizes. The choice of course depends entirely on how you want to serve the quiche. You have one-person quiche shapes. I like that very much for Christmas dinner and other festive occasions. But with a buffet I often use a shape with a diameter of 24 cm or larger, so more persons at once can be served.
