How do you make a vegetarian pasta salad extra delicious? With tasty ingredients and a super yummy dressing (with mayonnaise). And then even the real meat lover can't get enough of this crowd-pleasing recipe. This creamy side dish is richly filled, juicy and the flavor is fantastic!
Bring a pan with 2 inches (5 cm) of water to a boil.
Add 2 teaspoons of salt to the water and then add the penne.
Cook the penne al dente according to the time description on the package.
Drain in a colander.
Put in a bowl and mix one tablespoon of olive oil through the pasta. Allow cooling to room temperature.
Wash and cut the cucumber vertically into quarters and then into slices.
Wash and quarter the cherry tomatoes.
Chop the pearl onions finely.
Tear the basil into strips.
Prepare the dressing by mixing the mayonnaise with the remaining olive oil, salt, and pepper.
Mix the tomatoes, cucumber, basil and chopped onions through the pasta.
Stir the dressing into the pasta.
Cover with plastic foil and let it cool and marinate in the refrigerator for at least 2 hours.
Just before serving: Grate some cheese on top and serve.
1. Pasta - Use a bigger pasta like fusilli or penne. The dressing will stick around it. Use macaroni if you want to prepare a macaroni salad. 2. Cherry tomatoes - Because they enhance the flavor take the best cherry tomatoes you can buy. Roma tomatoes are a great choice.3. Alternatives - Cherry tomatoes - can be substituted with sun-dried tomatoesPearl onions - if you don't have them around, you can replace them with a finely cut shallot.Old cheese - Parmesan cheese is a great replacement for the old cheese in this salad.4. Also delicious - Add one tablespoon of pesto to the dressing.5. Storage - This salad can be made one day before you are going to eat it. Cover it with plastic foil and store it in the refrigerator. When storing this salad take in mind that you need to add some extra dressing to keep it creamy (otherwise it will become dry). A great tip is to collect the cooking water and add three (cooled) tablespoons to the dressing. The starch in the pasta water gives the dressing more volume, but won't give a loss of flavor.This salad can be stored for up to three days in the refrigerator.
