Cut the vanilla beans open and put them in the bottle.
Put the bottle away for 3 months in a cool, dark place.
Keep the bottle turned upside down once a week and put it away in the dark again.
The extract is ready after 3 months.
N.B. I use a lot of vanilla extract (of course also because of the blog and I use about a bottle a year) Most times you need 1 teaspoon in a recipe
The vanilla extract is marinated for 3 months before you use it. That way the vodka gets a deep vanilla flavor.
The base of this extract has to contain alcohol. And you choose an alcoholic beverage that has got almost no added flavor. Therefore you choose vodka. If you don't use alcohol you couldn't store the vanilla extract. If you don't want to use alcohol use vanilla sugar or a pod of vanilla.
This recipe is great for about 1 year of baking (at least in my household).
You can make a mint extract by putting 5 sprigs of mint in the vodka
You can make a cinnamon extract by putting 3 cinnamon sticks in the vodka.
