Add the sugar and bring to the boil on low heat, while stirring.
Let it boil for 2 minutes.
Put everything in a blender and turn it on until you've got a puree.
Let it cool down to room temperature.
Caipirinha with apricots
Put 2 tablespoons apricot puree in a cocktail glass.
Halve the lime and slice into 3 parts.
Put ice cubes and lime parts into a cocktail shaker.
Add the Cachcaça to the shaker.
Put a sieve and a lid on the shaker and shake for 1 minute.
Pour the Caipirinha through the sieve into the glass.
Garnish with ice cubes (optional) and some lime and fresh apricots.
Notes
The apricots are cooked with some sugar to get a sweet apricot sauce that is very soft and easy to drink. If you didn't cook the apricots but just put them in the blender, then you could get some hard pieces in between.
Keep your hand on the lid while shaking, You don't want the cocktail splash on your walls.
Pour the Caipirinha through a sieve into the glass. You don't want to thin it with ice, just cool it.
A real Caipirinha uses Cachaça as a liqueur. But if you don't have that, you can also use Vodka or Rum.
