It's one of the easiest mocktails to prepare, with a bit of rosemary syrup, grapefruit juice, and sparkling water.

Preparation
If you don't have store-bought grapefruit juice, start with juicing them. You'll need about 6 grapefruits.
Rosemary sugar syrup
In a saucepan add water and sugar and bring to the boil, while stirring.
Let it boil until the sugar is dissolved. Turn the heat off.
Put the sprigs of rosemary into the sugar syrup and let it marinate for 30 minutes.
Hang a sieve in a bowl and sieve the sugar water. You can use a coarse sieve.
Pour the sugar water into a clean bottle or jar and let it cool further in the refrigerator.
Sparkling grapefruit mocktail with rosemary
Take a jar and add 2 cups of grapefruit juice.
Add ¼ cup (60 ml) rosemary syrup to the jar.
Fill the jar with sparkling water.
Put in the refrigerator until use.
Serving time
Add rosemary sprigs, slices of grapefruit, and ice cubes to the jar.
Serve immediately.
NOTES
The redder the grapefruit, the sweeter the taste. I use pink grapefruit juice for this mocktail because the color is so beautiful. But if you prefer a slightly sweeter cocktail, you can also use red grapefruits.
This mocktail is delicious with sparkling water, but you can also use tap water.
If you do prefer to serve this as an alcoholic cocktail? Replace ⅓ cup of water with ⅓ cup of rum.
To make it look even more beautiful make a sugar rim. First, dip the glasses in water and then in some sugar. Let that air dry for 15 minutes.
