Cucumber Appetizers with Leek Dip (Dutch Heksenkaas / Witch’s cheese) - Ideal to serve as a snack (and super quick and easy to make in large quantities). And that makes this one of my favorite finger food recipes of the moment. The recipe only has three ingredients! A lovely slim recipe, but 54 kcal per bite.

Instructions
Peel the cucumber.

Fry the bacon for 5 minutes on low heat and drain on kitchen paper.
2 oz. Bacon
Preparation
Cut the cucumber into 1 inch (2 cm) pieces or in thin slices for appetizer bites.
Hollow the cucumber (not through and through, about ¼ cm bottom).
Pipe some Leek dip on top.

Top the cucumber appetizers with fried bacon.
NOTES
1. Cucumber - Use a melon scoop or teaspoon to scoop out the cucumbers. Make sure you do not hollow them through (because then the filling will fall out) but leave an edge of about ¼ inch / 0.5 cm.You take the middle out of the cucumber. The center is moist because of all the seeds. When you mix that with the leek dip, it becomes liquid and can run out. And this way, all the flavors are also nicely mixed with every bite you take.If you don’t want to hollow out, cut the cucumber slices ½ cm and pipe the Witch’s Cheese on top.2. Piping - If you don’t have a leek dip tube, you can also put the dip in a piping bag and pipe a swirl on top of the cucumber (use a large, non-serrated nozzle). Or you can use a teaspoon to spread the filling.3. Bacon - Drain the bacon on kitchen paper after cooking. He is much less fat that way.4. Vegetarian - If you want a vegetarian snack, replace the bacon with sun-dried tomato strips.5. StorageRefrigerator - Cover the cucumber appetizers with leek dip and bacon loosely with plastic foil and store up to a day in the fridge. You can store the individual ingredients for up to three days in the refrigerator.6. The nutritional value is per cucumber bite with leek dip and bacon.
