Preheat the oven to 390°F. Butter 4 soufflé dishes or ramekins well.
Peel and dice the Jerusalem artichokes into ½ x ½ inch size (1 x 1 cm).

Melt butter in a skillet. Add the water and diced artichokes and simmer over medium heat until the water evaporates and the artichokes are tender. Add a splash more water if needed.

Brown briefly, then mash with a fork.
In a separate pan, melt the remaining butter.

Add the flour all at once and stir for 2 minutes without browning.

Whisk in the cold milk in one go until smooth and thickened. Remove from heat.

Stir in the mashed artichokes, egg yolks, cheese, salt, pepper, and nutmeg.

In a very clean bowl, beat the egg whites with a pinch of salt until stiff.

Fold one-quarter into the artichoke mixture to loosen it, then gently fold in the rest.
Spoon into the prepared dishes and bake for 20 minutes without opening the oven. Serve immediately.
NOTES
1. Why can't I open the oven while it bakes? Soufflés are sensitive to temperature changes. Opening the door can cause them to sink before they're set.2. How do I get the egg whites to whip properly? Use a completely grease-free bowl and beaters. Even a small amount of fat will prevent the whites from stiffening.3. How do I know the artichokes are cooked enough? A fork should slide in easily. If there's resistance, add a little water and cook a bit longer.4. Can I change the vegetable? Yes. Parsnip or cauliflower both work well in this recipe.5. Can I make this ahead? No. Bake it just before serving for the best rise and texture. You can prep the Jerusalem artichoke base in advance if needed.6. StorageThis soufflé cannot be stored or frozen.
