Instructions
Melt the butter in a large frying pan over medium heat. Add the red onion and fry for 3–4 minutes until translucent and soft.
2 tablespoons butter, 1 red onion
Add the apple cider vinegar and brown sugar to the pan. Stir until the sugar has completely dissolved.
½ cup apple cider vinegar, ½ cup dark brown sugar
Add the red cabbage and apple cubes to the pan. Sprinkle the cinnamon, nutmeg, allspice, salt, and pepper over the cabbage. Stir everything well.
Bring to the boil, then turn the heat down. Cover the pan with a lid and let the red cabbage simmer gently for 1 hour. Stir occasionally to ensure that the cabbage is not getting too dry. Add a little water if necessary.
Meanwhile, fry the bacon in a frying pan until crispy. Remove the bacon from the pan and let it drain on kitchen paper. Save two tablespoons of the bacon fat and add it to the red cabbage for extra flavor. You can throw away the rest of the fat.
4 oz. bacon bits
Serving: Spoon the red cabbage into a nice bowl and sprinkle the crispy fried bacon over it.
