Instructions
Preheat the oven to 390 °F or 355 °F. Place a rack in an oven dish or baking tin.
Make the sauce. Place the mustard, apple cider vinegar, brown sugar, a pinch of salt, and pepper in a saucepan over medium heat.
4 tablespoons coarse mustard, 2 tablespoons apple cider vinegar, ¾ cup dark brown sugar, ¼ teaspoon salt, ⅛ teaspoon ground black pepper
Stir well and add the cola little by little. Let the mixture simmer for about 5 minutes, stirring occasionally. Remove the pan from the heat.
½ cup Coca Cola
Make diagonal cuts in the ham with a sharp knife to get a diamond pattern. Insert cloves into the intersections of the diamond pattern. Place the ham on the rack in the baking dish.
1 ½ pound ham, 20 cloves
Brush the ham with a generous amount of the sauce. Pour the rest of the sauce into the baking tin.
Place the ham in the middle of the oven and reduce the temperature to 355 °F or 320 °F. Bake for about 20 minutes.
Remove the ham from the oven. Spoon half of the sauce from the oven dish into a separate pan. Brush the ham again with the sauce and put it back in the oven for another 20 minutes.
Cook the sauce in the pan until it thickens (about 5 to 10 minutes over high heat).
Now brush the ham with the thickened sauce and bake it again in the oven for about 20 minutes. Use a meat thermometer to check whether the ham is done. Insert the thermometer into the center of the thickest part of the ham; the temperature should be 150 °F.
Remove the ham from the oven. Adjust the sauce if necessary, and let the ham cool slightly before cutting it.
NOTES
1. Ham
Ham is the thick part of a pig's hindquarters. It is sold with and without bone.
For ham, you need 10 minutes before 4 oz. (100 grams) are done. So, if your ham is heavier, extend the baking time by 10 minutes for every extra 4 oz.
If you want to ensure your ham is done, use a meat thermometer. The temperature must be 150 °F (65 °C).
2. Cola: Use regular Coke and not diet variants. The sugars in the cola ensure that the sauce caramelizes. If you want some variation, consider Cherry cola (delicious with a hint of cherry).3. Do you have any leftovers? This is delicious:
Thinly sliced on bread
Chopped small in soup or a meal salad,
as a pizza topping.
4. Storage Allow the meat to cool quickly to room temperature before storing.
Refrigerator: Wrap the meat in plastic wrap. This will stay good for up to 3 days in the fridge.
Freezer: Wrap the ham in foil and then in a freezer box. Freeze and store for up to 3 months.
Reheat: Preheat the oven to 285 °F (140 °C) and heat the meat to a core temperature of 122 °F (50 °C).
