Ingredients
4sheetspuff pastry4 x 4 inch (10 x 10 cm) each
1sunflower oil
3red onionsslice into thin half rings
1clove garlicsqueezed
¼cupport wine
1½teaspoonsdried thyme
2tablespoonssugar
3½oz.bacon bits
3½oz.Brie cheese

Instructions
Preheat your oven to 410 ℉ and line a baking sheet with parchment paper.
Let the puff pastry thaw slightly and cut each sheet into four squares.

Heat one tablespoon of oil in a skillet. Add the onions and sauté for three minutes, or until they become translucent.
3 red onions, 1 sunflower oil
Add the garlic and fry for 30 seconds.

Pour in the port, then add thyme and sugar.
¼ cup port wine, 1½ teaspoons dried thyme, 2 tablespoons sugar
Let everything simmer for ten minutes on low heat, stirring occasionally.
In a separate skillet, fry the bacon until crispy. Let it drain on a paper towel.
3½ oz. bacon bits
Place the puff pastry squares on the baking sheet. Use a fork to poke holes in each square to prevent them from puffing up too much.
Spoon a little of the caramelized onion mixture onto each square.
Sprinkle bacon bits on top and place a slice of Brie on each. Finish with a pinch of black pepper.
3½ oz. Brie cheese, ground black pepper
Bake the bites for 20 minutes, until golden and puffed. Serve warm and enjoy!

1. Can I substitute the Port wine? Yes, red wine or apple juice with a teaspoon of balsamic vinegar works well, too.2. Is the Brie rind edible? Yes, and it adds a lot of flavor—do don't toss it!3. Can I use regular yellow onions? You can, but red onions give a milder, sweeter taste.4. Is this recipe pregnancy-safe? Yes, make sure the Brie is made from pasteurized milk (check the label).5.
