200gramssugar
½teaspoonlemon juice
270mlwater
40gramscorn flour+ 1 extra tablespoon
4teaspoonsgelatinor 1½ teaspoon agar agar
1teaspoonvanilla extract
20gramscandied orange peelsliced finely
20gramswalnutschopped
3tablespoonsconfectioners sugar

Instructions
Roast the walnuts in a dry frying pan on low heat until they smell nutty. Turn of the heat.
Soak the gelatin in 2 tablespoons of water.
Add the sugar, lemon juice, and ¾ cup of water to a saucepan and bring to the boil. Then turn the heat to low.
Mix 2¾ tablespoon of cornflour with ½ cup of water until you get a smooth mixture.
Add that to the saucepan, while stirring.
Cook for 2 minutes, then add the gelatin.
Turn the heat to low and simmer for 20 minutes.
Line a baking form with plastic foil.
Mix the confectioner's sugar with 1 tablespoon cornflour.
Duts the baking form with the sugar/cornflour mixture (just a thin layer).
Take the saucepan off the heat and cool for 5 minutes at room temperature.
Add the orange peel, walnuts, and vanilla extract and mix everything well.
Pour the mixture into the baking form.
Flatten the top with a spatula.
Let it cool down at room temperature for another 4 hours.
Cut the Turkish delight into small cubes. Dust them with the confectioner's sugar/cornflour mixture.
NOTES
In this recipe, gelatin is used so it isn't a vegetarian recipe. If you want a vegetarian version, replace the 4 teaspoons of gelatin with 1 ½ teaspoon of agar.
By using walnuts this is not a nut-free recipe. You can make a nut-free version by replacing the walnuts with cranberries or chunks of chocolate.
Cover the tin with plastic, so your Turkish delight is easy to take out of the tin.
If you don't use food coloring the Turkish delight will turn yellow instead of red as seen in traditional stores. You can add a drop of red food coloring if you wish though.
