Instructions
Heat olive oil in a skillet. Add diced ham and fry until lightly browned.

Remove ham with a slotted spoon and drain on paper.
Whisk eggs with kecap manis in a bowl.
2 eggs, 1 tablespoon Kecap Manis
Pour the egg mixture into the skillet on low heat.
Let eggs set for 1–2 minutes, then gently loosen edges with a spatula.
Cook one more minute until just set.
Slide the omelet onto a plate.
Add arugula, shrimp, spring onion, and ham cubes on one side.
3½ oz. cocktail shrimp, 2 oz. arugula, ½ spring onion
Fold the omelet in half and serve immediately.
