In a small bowl, combine the Panko, Parmesan cheese, garlic powder, paprika, chili powder, salt, and black pepper.

Put the two egg whites in a second bowl.

Dip the zucchini rounds in the egg whites and give them an egg wash.

Then dip it into the bowl of Panko mix. Press it down briefly so that it is well covered on each side of the zucchini, and then shake off the excess.
Place the slices in the Air Fryer basket and bake for 15 minutes at 390 ℉. Shake in between so that the hot air will get to all the zucchini slices and baking is as even as possible.
Eat them warm or let them cool to room temperature. Enjoy this healthier option with your favorite dipping sauce, like a honey mustard dip.

1. Zucchini: Cut the zucchini into thin slices for the zucchini chips (use a sharp knife for the best slices). Even easier is to use a coarse grater or a mandolin slicer. The slices should be about ⅛ inch (¼ cm) thick. By cutting them all the same thickness, they are ready at the same time.2. Panko breadcrumbs: If you don't have it, you could also use breadcrumbs.3. Parmesan cheese: You can also use Grana Padano.4. Oven: If you don't have an Air Fryer, you can make these zucchini chips in the oven. Line a baking sheet with parchment paper and preheat the oven to a 430 °F (220 °C) convection oven. Spread the zucchini in a single layer on the baking tray (use a second tray if necessary) and bake for 20 minutes. Turn the zucchini off after 10 minutes so that they will grill evenly.5.
