NOTES
1. Potatoes -
Use floury potatoes to make this recipe. Russet, Doré, King Edward, and Maris Piper are great choices. They are high in starch and low in moisture. Or use a red potato, such as Roseval, if you want to eat with skin (or the Organic variant).
First, briefly pre-boiling the potatoes and then quickly fry them dry in a hot pan in a bit of oil. This makes them wonderfully soft on the inside and gives them a crunchy outside. And you need much less fat.
In the picture, I opted for thick Flemish fries (thick fries), but you can also make great French fries with this recipe. Then cut the potatoes into long thin strips. Adjust the oven time (shorten it by 5 to 10 minutes) and remove the French fries from the oven when they are golden brown. And enjoy the fresh fries.
2. Variations
Garlic Parmesan - Sprinkle with garlic powder and freshly grated Parmesan, so it melts nicely.
Spicy - Sprinkle with ⅛ teaspoon chili powder and cumin powder.
Cajun fries - Flavoring with Cajun seasoning is so good!
3. Prepare in the Air fryer - Fill the air fryer no more than ⅓ full of fresh fries. Preheat the Air fryer to 350 °F (ca. 177 °C). Bake the fries for 5 minutes and then shake them well. Repeat this three times.4. Prepare in the Oven - When you use a conventional oven, set the temperature to 460 °F (ca. 238 °C). In a convection oven, 430 °F (ca. 221 °C) is sufficient.5. StorageThese fries are the best fresh. However, when you reheat them, they will become a bit drier.
Refrigerator - in an airtight freezer box, you can store the fries for two days.
Freezer - Place the fries in a layer of baking paper on a baking tray and let the fries freeze. Then remove the frozen fries from the oven and store them in an airtight freezer container. This way, you can keep them for up to 2 months.
Reheat - Place the potatoes in a layer in the oven at 390 °F (ca. 199 °C) (or Air fryer at 350 °F (ca. 177 °C)) for resp. 8 and 5 minutes.
6. The nutritional value is per portion, assuming that four people eat the healthy fries from the oven.
