2tablespoons coarse mustard
½teaspoonsalt
¼teaspoon ground black pepper

1pound sweet potatoesin cubes
1pound parsnipspeeled and cut into cubes

1beef stock cube

Instructions
Sprinkle the beef with salt and pepper and mix with the mustard.
2 pounds chuck roast, 2 tablespoons coarse mustard, ½ teaspoon salt, ¼ teaspoon ground black pepper
Melt butter in the pan and fry the meat until brown on all sides for five minutes. Place the meat, juices, and scrapings in the slow cooker.

Divide the carrot, parsnip, garlic, leek, and sweet potato over the meat.
Pour the beer and water into the slow cooker. Crumble the stock cube over the ingredients.

Mix everything well and put the lid on the slow cooker. Turn on low and let cook for 8 hours.
Mix and serve immediately.

1. Chuck roast: is used in this recipe. But you can also use a round roast (top or bottom) or tri-tip roast for this beef stew. This meat needs a lot of stewing time, so it has time to absorb all the flavors well and, at the same time, become wonderfully tender.2. Beer: Beer is a seasoning, but should not be too overpowering. Choose a beer that is not too bitter. A dark beer or blond beer are both very suitable for this.3. Larger portion?
