Cut the avocados in half lengthwise up to the pit. Twist the halves apart. Remove the pit and scoop the flesh out of the skin with a spoon.

Place the avocado flesh on a deep plate and mash it with a fork.
Squeeze about 2 tablespoons of lime juice and pour it over the avocado. This adds flavor and prevents the guacamole from turning brown.

Add the finely chopped red pepper, shallot, tomato, pressed garlic, and coriander. Mix everything well.
