Preparation
Put the raisins in a bowl with hot water and let it stand for 5 minutes. Drain and pat dry.
Cut the bottom of the chicory and half it. Remove the bitter core.
Cut the chicory into thin strips and wash it well.
Wash the apple and remove the core. Cut the apple into cubes. You can leave the peel on.
Cut the cheese into small cubes.
Finely chop the walnuts.
Cut the spring onion into small strips.
Dressing
Place the Greek yogurt, mayonnaise, and mustard in a bowl.
Pour the ginger syrup, honey, and olive oil with the yogurt.
Season with salt and pepper and stir well.
Chicory and apple salad
Put the chicory in a salad bowl and add the cheese and apple.
Divide the spring onions and raisins over the salad.
Pour the dressing into the salad and mix everything.
Sprinkle with walnuts and serve immediately.
NOTES
1. Raisins - Soak the raisins in hot water for five minutes. This makes them nice and juicy. 2. Ginger Syrup and Honey - The sweeteners of the dressing. Use ginger syrup and no fresh ginger (not even in cubes) as that will become predominant. You can also replace these liquid sweeteners with, for example, maple syrup or golden syrup. 3. SubstitutesCheese - use a Gouda cheese. You can also replace it with Feta or blue cheese. Apple - A deliciously sweet apple. For Eg Jonagold or Pink Lady tastes great in this salad. You can also replace it with wedges of tangerine or half grapes. If you slice the apples in advance sprinkle them with some lemon juice, to prevent browning.4. Delicious with - A chicory salad with apple is delicious with the BBQ. Or serve it next to a meat or fish dish. The fresh taste goes well with this. 5. Storage - You can prepare this salad one day in advance, but don't add the walnuts just yet (they'll get soft and that's a shame). Keep it covered in the refrigerator. 6.
