Spoon the mixture into a bowl, cover with plastic foil and let it set in the refrigerator for 2 hours.
Scoop small portions of the truffle mixture using two teaspoons.
Quickly roll the portions between your hand into balls and coat them in cocoa.
½ cup Dutch unprocessed cocoa
Put the truffles back in the refrigerator until serving.
NOTES
1. Why is my ganache too soft to roll? It needs more chill time. Put it back in the fridge until it is firm enough to scoop.2. Why do the truffles lose their shape while rolling? Your hands warm the ganache quickly. Roll a few truffles at a time and return them to the fridge if they start to soften.3. Can I make these without alcohol? Yes. Use orange flavoring instead of the liqueur.4. What cocoa works best for coating? Dutch-process cocoa gives the smoothest, deepest finish. Regular unsweetened cocoa can also be used.5. Storage
Fridge: Store the truffles in the refrigerator for up to 3 days.
Freezer: Freeze them individually wrapped in wax paper and packed in an airtight container for up to 2 weeks. Thaw them in their wrapping at room temperature for 2 to 3 hours.
