NOTES
1. Can I make this ahead? Yes. It needs at least 4 hours in the fridge and can be made earlier in the day.2. How do I know when the mascarpone mixture is ready? Stop mixing when it is thick, smooth, and softly holds its shape.3. What cookies work best? Use crisp chocolate cookies or chocolate biscuits. They should soften slightly as the tiramisu chills, but still hold the layers.4. Do I need to chill it for 4 hours? Yes. The chill time helps the mascarpone filling firm up and gives the cookies time to soften.5. Can I make it alcohol-free? Yes. Replace the coffee liqueur with strong coffee or espresso and the vanilla extract with two teaspoons of vanilla sugar.6. StorageStore covered in the fridge until serving. This chocolate tiramisu is best within 1 to 2 days. Keep it cold, because the mascarpone filling needs refrigeration to stay firm.
