Instructions
Raspberry popsicles
Wash the raspberries.
Put the raspberries with the water and rose water in a blender and puree.
Sieve the puree through a fine sieve to remove the seeds.
Mix the sieved puree with cream and honey.
Pour this into 10 shot glasses. Put a cocktail fork or spoon in every glass.
Cover with plastic foil.
Freeze for at least 8 hours.
Carefully take the popsicles out of the glasses.
Raspberry popsicles with champagne
Pour the champagne into the glasses.
Add a raspberry popsicle in every glass.
Sprinkle some rose petals on top and serve immediately.
NOTES
You use raspberries for their great taste and color. But if they are not in season, you can also use blackberries, orange, red berries (and so on).
You sift the raspberry puree to remove the seeds. Ice with no seeds is tastier.
Instead of honey, you can also use agave syrup.
If you have a lactose allergy, replace the cream with soy milk.
