2sticksbutter unsalted, room temperature
⅔cupfine granulated sugar+ extra to sprinkle on top
2cups all-purpose flour
2teaspoons ground ginger

Instructions
Line a baking tray with baking paper.
Preheat the oven to 320 ℉.
Mix the butter and sugar in a bowl for about 2 minutes until light and fluffy.
2 sticks butter , ⅔ cup fine granulated sugar
Add the flour and ginger to the mixture. Stir until well combined.
Roll it into a roll (about 2 inches / 4 cm thick).
Wrap the dough in plastic, and refrigerate it for 30 minutes.
Cut the dough into ¼ inch (½ cm) thick slices and place them on the baking sheet with 2 inches (5 cm) between them.
Bake the cookies in the oven for 20 minutes until golden.
When you take the cookies out of the oven, sprinkle them with extra sugar.
Let the cookies cool down on a wire rack before serving.
