Sauce
Mix the soy sauce, oyster sauce, mirin, sugar, and white pepper until the sugar has dissolved. Set this aside.
4 tablespoons light soy sauce, 4 teaspoons dark soy sauce, 4 tablespoons oyster sauce, 4 tablespoons mirin, 1 tablespoon white sugar, ⅛ teaspoon white pepper
Beef Chow Mein
Cook the noodles according to the instructions and drain well.
1 pound egg noodles
Heat the oil in a pan and add the garlic. Stir-fry for 30 seconds. Add the ground beef and fry until brown and crumbly. Add two tablespoons of sauce and fry for another two minutes.
Pour the eggs into the pan and mix with the beef. Fry until set and cooked.

Add the carrots and cabbage and fry for one to two minutes until the cabbage shrinks. Then add the bean sprouts and noodles and mix well.
