Instructions
Cut the smoked salmon into thin strips and keep it chilled until needed.
3½ oz smoked salmon
Melt the butter in a saucepan over medium heat. Stir in the flour until it forms a smooth paste, then cook on low heat for 3 minutes.

Slowly whisk in the cooled stock until smooth. Bring to a boil and cook for 10 minutes.

Lower the heat and stir in the mustard. Season with salt and black pepper.

Add the asparagus and simmer gently for 4 minutes, until just tender.
