This recipe for quick fried rice with ham, egg, and vegetables is one of my favorite dishes for a busy weeknight. It is easy to make, fast, and budget-friendly, and you probably already have most of the ingredients at home.When I don't have time to cook an elaborate meal but want to serve something tasty, this is my rice dish.

Ingredients
4cups white ricecooked (see *), cooled in the fridge

2tablespoons sunflower oil
4cloves garlicsqueezed
2tablespoons sesame oil
1teaspoon fish sauce
2tablespoons Japanese soy sauce
½teaspoon salt
½teaspoon ground black pepper
1pound carrots and peasfrozen
½pound ham cubes

Instructions
Cook the rice*
Cook the rice according to the instructions on the packaging. Let the rice cool. You can also make the rice a day in advance and store it covered in the refrigerator.
4 cups white rice
Break the eggs in a bowl and add some salt and pepper.
Heat one tablespoon of sunflower oil in a frying pan and fry the eggs as a thin omelet.

Let the omelet cool, roll it up, and cut it into thin strips.
Make the fried rice
Heat the other tablespoon of sunflower oil in a large pan.
Add the garlic and stir-fry for 30 seconds until it smells nice.

Add the cooled rice to the pan and stir well.
Season with sesame oil, fish sauce, soy sauce, salt, and pepper. Mix everything well so that the rice absorbs the flavors.

Add the carrots and peas, ham cubes, and egg strips to the rice. Stir everything together and heat it well.

Serve
Sprinkle the finely chopped spring onion over the fried rice.

NOTES
1. Rice: You need 1 cup (150–200 gram) of cooked rice per person. Rice that has cooled down well in the refrigerator is the tastiest. It can be cooked a day earlier (that is even tastier).2. Soy sauce: Use Japanese soy sauce, Kecap Asin, or light soy sauce (available at the Asian Supermarket).3. Storage Allow the rice to cool down quickly before storing it.
Refrigerator: Store the fried rice covered in the fridge for up to two days.
Freezer: You can store the rice in a freezer box or bag for up to two months. Then, let it defrost in the refrigerator.
Reheating: Heat in the microwave. Or fry in a frying pan or wok until warm.
