This recipe for easy fried rice with ham, egg, and veggies is one of my favorite dishes for a busy weeknight. It is easy to make, fast, and budget-friendly, and you probably already have most of the ingredients at home.
When I don't have time to cook an elaborate meal but want to serve something tasty, this is my rice dish.

Delicious Homemade Fried Rice with Ham, Eggs, and Veggies
Like everyone else, I sometimes have those evenings when I don't feel like cooking or don't have time. Then I have a few recipes that I fall back on, like my delicious bami goreng, quick spaghetti with broccoli and ground beef, and chow mein with ground beef and vegetables.
But this recipe is also in my recipe notebook. It is ready quickly (on the table within 15 minutes), super easy, and the ingredients are budget-friendly. And most importantly, the kids love it!
The combination of fried soft rice, salted ham, and egg with vegetables is super tasty. The advantage is that you can do anything with this recipe. It is ideal for leftovers. If you still have some peppers, zucchini, or mushrooms in the fridge, they make a great combination with the fried rice. This recipe is perfect for an easy meal that everyone enjoys.
Ingredient notes
- Rice: This recipe used white rice, but whole grain rice would also work fine, as would basmati and jasmine rice. Make sure it is cooked and cooled.
- Garlic has a wonderful smell and deep flavor. Don't burn the garlic, or it will become bitter.
- Sesame oil: Gives the rice a nutty flavor. You only need a little bit for that beautiful flavor.
- Fish sauce adds a savory, salty flavor to this recipe. If you don't have fish sauce, add extra soy sauce.
- Japanese soy sauce: Adds a little salty flavor and some depth. You can also use Kecap Asin or light soy sauce.
- Carrots and peas: Give the recipe color and bite. Use the frozen variety. If you want fresh peas with carrots, cook them until done before adding them.
- Ham cubes are soft and salty. If you don't eat ham, you can also use chicken, tofu, or shrimp for a different twist. Eggs are a bit more protein, deliciously soft, and a good combination with fried rice.
- Spring onion gives a fresh, mild onion flavor. Of course, the color contrasts nicely with the rice.
Instructions
- Start by cooking and cooling the rice. Beat the eggs and fry a thin omelet that you cut into strips. Heat sunflower oil in a pan and add garlic. Stir-fry for 30 seconds; add the cooled rice to the pan and stir everything well.
- Add sesame oil, fish sauce, soy sauce, salt, and pepper to the rice and mix so that the rice is covered with this flavor mixture. Now add the carrots, peas, ham, and strips of egg and mix everything well. Let it heat through. Sprinkle finely chopped spring onion over the rice for a fresh topping, and serve.

- 4 cups white rice cooked (see *), cooled in the fridge
- 2 eggs size L
- 2 tablespoons sunflower oil
- 4 cloves garlic squeezed
- 2 tablespoons sesame oil
- 1 teaspoon fish sauce
- 2 tablespoons Japanese soy sauce
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1 pound carrots and peas frozen
- ½ pound ham cubes
- 2 stalks spring onions thinly sliced

Instructions
Cook the rice*
- Cook the rice according to the instructions on the packaging. Let the rice cool. You can also make the rice a day in advance and store it covered in the refrigerator.4 cups white rice
- Break the eggs in a bowl and add some salt and pepper.
- Heat one tablespoon of sunflower oil in a frying pan and fry the eggs as a thin omelet.2 eggs, 2 tablespoons sunflower oil
- Let the omelet cool, roll it up, and cut it into thin strips.
Make the fried rice
- Heat the other tablespoon of sunflower oil in a large pan.
- Add the garlic and stir-fry for 30 seconds until it smells nice.4 cloves garlic
- Add the cooled rice to the pan and stir well.
- Season with sesame oil, fish sauce, soy sauce, salt, and pepper. Mix everything well so that the rice absorbs the flavors.2 tablespoons sesame oil, 1 teaspoon fish sauce, 2 tablespoons Japanese soy sauce, ½ teaspoon salt, ½ teaspoon ground black pepper
- Add the carrots and peas, ham cubes, and egg strips to the rice. Stir everything together and heat it well.1 pound carrots and peas, ½ pound ham cubes
Serve
- Sprinkle the finely chopped spring onion over the fried rice.2 stalks spring onions
- Serve immediately and enjoy your delicious, homemade meal!
Notes
Allow the rice to cool down quickly before storing it.
- Refrigerator: Store the fried rice covered in the fridge for up to two days.
- Freezer: You can store the rice in a freezer box or bag for up to two months. Then, let it defrost in the refrigerator.
- Reheating: Heat in the microwave. Or fry in a frying pan or wok until warm.
