Quick Hoisin Noodles with Ground Beef & Veggies
I discovered this recipe on a rainy Wednesday evening. I didn't feel like cooking, but I did want something tasty. In the fridge and pantry, I found noodles, green beans, ground beef, and some bottles of Asian sauces. After a few tests, this dish was born. Since then, it has been on the table at least once a month because my family loves it!
It reminds me of the fragrant wok meals from a good Chinese restaurant: a little spicy, a little sweet, and salty at the same time. And the sauce? It soaks into the noodles. Together with crispy green beans and spicy ground beef, it is simply delicious.
What do I like about it? It fits perfectly with how I want to cook: easy, quick, and, above all, delicious, just like my quick 15-minute chicken with broccoli and rice or the one-pan lasagnette. Tasty cooking does not have to be difficult. This dish proves that. And extra nice: the leftovers are delicious the next day for lunch or as a base for a meal salad.
My tips for a quick 15-minute meal
If you have little time, it is nice if everything runs smoothly. That is why here are my best tips to make this recipe in 15 minutes:
- Make sure everything is ready. Chop the onion, press the garlic, and prepare your sauces.
- Use a large pan or wok. This way, you can fry everything at the same time and mix well.
- Cook smart. Put the beans, noodles, and meat in separate pans at the same time.
- Taste the sauce. Do you find it too spicy? Then add some extra hoisin sauce. Or extra sambal if you prefer a spicy flavor.

Ingredients
- 1 pound green beans
- 1 pound egg noodles
- 1 tablespoon vegetable oil, for frying
- 1 onion, finely chopped
- ⅛ teaspoon salt
- 1¼ pounds ground beef
- 3 cloves garlic, pressed
- 1 teaspoon Chinese five-spice powder
- 1 tablespoon sweet chili sauce
- 5 tablespoons hoisin sauce
- 2 tablespoons Japanese soy sauce
- 1 teaspoon sambal oelek
- 1 tablespoon fish sauce
Garnish
- 2 spring onions, finely chopped

Instructions
- Bring a pan of water to a boil and cook the green beans for 8–10 minutes, until they are firm and slightly chewy. Drain and set aside.1 pound green beans
- Meanwhile, cook the noodles according to the package instructions. Drain.1 pound egg noodles
- In a wok, heat a dash of oil in a large pan or wok and fry the onion with a pinch of salt until translucent.1 tablespoon vegetable oil, 1 onion, ⅛ teaspoon salt
- Add the ground beef and fry until crumbly. Add the garlic and fry for another minute.1¼ pounds ground beef, 3 cloves garlic
- Add the five-spice powder, sweet chili sauce, hoisin sauce, soy sauce, sambal and fish sauce. Let simmer for 2-3 minutes, allowing the flavors to be well absorbed.1 teaspoon Chinese five-spice powder, 1 tablespoon sweet chili sauce, 5 tablespoons hoisin sauce, 2 tablespoons Japanese soy sauce, 1 teaspoon sambal oelek, 1 tablespoon fish sauce
- Stir in the green beans and heat thoroughly.
- Add the noodles and mix everything well.
Garnish
- Garnish with the finely chopped spring onion.2 spring onions
Notes
- Swap the green beans for broccoli, bell peppers, or snap peas. They all work well in this dish.
- Want to make it extra special? Add a fried egg on top.
- No hoisin? You can mix soy sauce with a bit of honey or brown sugar.
- No sambal Oelek? Use sriracha, chili paste or thinly sliced red pepper.
- Refrigerator: Store any leftovers in a closed container and keep them refrigerated for up to 2 days.
- Reheat: To warm them up, heat in a frying pan with two tablespoons of water. That makes the noodles nice and loose again.
- Freezer: This dish is not suitable for freezing—the noodles get mushy. So it's best to eat it fresh (and it’s so tasty, that won’t be a problem!).
