This roasted tomato pasta salad makes sure the most convincing carnivore won't miss the meat? Marinate the vegetables, roast them in the oven and use every bit of flavor that is released in the dressing. Because throwing away flavors (especially if they are so good) is a SUPER shame! And that makes this pasta salad with roasted tomatoes irresistibly delicious!
Flavorful Pasta Salad
Another pasta salad recipe? Don't I already have a delicious pasta salad with smoked chicken and an Italian pasta salad with mozzarella on the blog? What made this pasta salad really need to be written?
Now because roasting the tomatoes in the oven releases so many flavors that you can then use in the dressing. This gives every bite a taste explosion in the mouth. And because this is a super easy recipe, as you have come to expect from me, you can also quickly prepare it for a large group (at the BBQ).
The Ultimate Dressing
This pasta salad is so tasty because of the delicious dressing. You make it by using all the flavors released by the recipe. And you mix it with a delicious sweet balsamic cream. The garlic, herbs, and roasted flavor of the tomato give this a deep and rich flavor.
Because you choose pasta like fusilli in this recipe, you get delicious flavors in every bite. Fusilli is twisted and when you mix it with the dressing it coats every bit of the pasta. That is why fusilli is a good combination with a dressing.
Top Tip
You can eat this salad warm or cold. But what often happens with a pasta salad if you let it sit a little longer is that it becomes dry. My expert tip is to collect a cup of pasta water (the water you cook the pasta in) when draining. Mix this with the salad when it becomes a bit drier. This way you can eat a pasta salad up to three days later!
You use pasta water because starch is released when cooking pasta. This makes this water a bit thicker and ideal to use for diluting your dressing.
Serve with
- It is delicious as a side dish for a BBQ.
- Serve with a baguette with some spread. For example, this delicious garlic butter.
- Make it Italian and eat Ciabatta with it.
- Or serve a soup beforehand. This Italian tomato soup with mascarpone is highly recommended.
- You assume ½ cup (100 grams) of cooked pasta per person, if you assume that it is a side dish (for example at the BBQ).
- If you eat this as a meal salad, assume 1 ¼ cup (250 grams) of cooked pasta per person.

Notes
- Refrigerator: Cool the pasta salad and cover with plastic wrap. You can store it this way for up to 3 days. (Add some cooking liquid to keep a smooth salad, see Expert tips.) If you want a lukewarm salad, warm it up in the microwave.
- Freezer: You may wonder whether it is good to freeze a pasta salad. It works fine if you freeze the pasta and make the stewed tomatoes fresh. But the structure changes quite a bit due to freezing. But what can you do with it? Freeze the pasta salad and fry it in the frying pan. Add some Parmesan cheese and you have delicious pasta for dinner!
