Ingredients Pearl Couscous Salad with Fresh Vegetables and Feta
- Pearl couscous (Israeli couscous) is a bit bigger and firmer than regular couscous. It is a perfect base that absorbs the flavor of the ingredients well. You can also replace it with regular couscous or bulgur.
- Stock cube: This gives the pearl couscous extra flavor. A vegetable or chicken stock cube is a good choice. Be careful when adding salt; typically, a lot of salt has already been added to the cube.
- Cucumber: Remove the seeds so that the salad does not become watery.
- Cherry tomatoes: Tomatoes and feta are a great combination. Cut them into quarters to create small, bite-sized pieces. You can also replace them with Roma or beef tomatoes cut into cubes.
- Feta: This is a salty and creamy cheese; choose the real Greek variety. If you can't get this, white cheese cubes are also a good choice.
- Red onion: This is spicy and sweet at the same time. Finely chop the onion so that the flavor is not too dominant.
- Olives: for a salty and a bite. Kalamata olives are delicious, but other olives are also good choices. Remove the pit.

- 1 cube vegetable stock or chicken
- ½ cucumber
- ⅔ cup cherry tomatoes quartered
- ½ cup feta cheese sliced in cubes ½ x ½ inch

- 2 tablespoons olives halved, remove the pit
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried mint

Instructions
Cook the couscous
- Put the couscous in a pan.1 cup Israeli couscous
- Crumble the stock cube over the couscous and add hot water until the water is ½ inch (1 cm) above the couscous.1 cube vegetable stock
- Cover the pan with aluminum foil and let the couscous stand for 10 minutes.
- Then, stir the couscous with a fork.
Prepare the vegetables
- Meanwhile, peel the cucumber, remove the seeds with a spoon, and cut the cucumber into small cubes.½ cucumber
