This pearl couscous salad with feta and mint is a salad that I could eat every day. It is simple and has so much flavor. And what I really like is that you can eat it warm or cold. It is ideal for a quick lunch, an easy dinner, or a side dish for the BBQ. I would say do it!

Ingredients
1cupIsraeli couscousPearl couscous
1cubevegetable stockor chicken
½cucumber
⅔cupcherry tomatoesquartered
½cup feta cheesesliced in cubes ½ x ½ inch
1red onionfinely chopped
2tablespoonsoliveshalved, remove the pit
1tablespoonolive oil
1teaspoondried oregano
½teaspoon dried mint

Instructions
Cook the couscous
Put the couscous in a pan.
1 cup Israeli couscous
Crumble the stock cube over the couscous and add hot water until the water is ½ inch (1 cm) above the couscous.

Cover the pan with aluminum foil and let the couscous stand for 10 minutes.
Then, stir the couscous with a fork.
Prepare the vegetables
Meanwhile, peel the cucumber, remove the seeds with a spoon, and cut the cucumber into small cubes.

Mix the salad
Add the cherry tomatoes, red onion, cucumber, feta, and olives to the couscous.

Pour the olive oil over it and add the oregano and mint.

Mix everything well, taste and season, if necessary, with some salt and pepper.
