Basic Irish Soda Bread
Preheat the oven to 430 °F or 390 °F.
Place parchment paper on a baking tray.
Sift the flour, baking soda, and salt into a large mixing bowl. Make a hole in the center of the flour mixture. (With filling look *)
3¾ cup all-purpose flour, 1 teaspoon baking soda, 1 teaspoon salt
Add the buttermilk and mix with a wooden spoon until you get an airy dough. If the dough is still falling apart, add some extra buttermilk. The dough should be a bit sticky.

Turn the dough onto a lightly floured surface and knead it a few times.
Form a round dough about 6 inches (ca. 15 cm) in diameter and place it on the prepared baking sheet.
Make a cross on the top of the dough with a sharp knife.
Slide the bread into the oven and bake for 15 minutes, then reduce the temperature to 390 °F or 355 °F and bake for another 20–25 minutes until the bread is golden brown.
Check whether the loaf of bread is sufficiently cooked by tapping the bottom. You should hear a hollow sound; otherwise, extend the baking time by 2–3 minutes.
Let cool on a wire rack or serve warm.
With Cranberries and Rosemary Filling
After sifting the flour, baking soda, and salt, add the ingredients for the filling: sugar, dried cranberries, and rosemary. Mix well with a spoon. Continue with the recipe (adding the buttermilk).
