Sprinkle the remaining chives over them.
NOTES
1. How do I keep the tomatoes from rolling? Cut a very thin slice from the bottom so they stand flat.2. Should the egg salad be smooth? No. A little texture helps it sit inside the tomatoes more easily.3. What tomatoes work best? Use ripe, flavorful cherry tomatoes. In a small bite like this, good tomatoes make a big difference.4. Why is there curry sauce in the egg salad? It adds a little sweetness and color to the filling, which works nicely with the curry powder and eggs.5. What does the curry powder do here? It gives the egg salad a mild warm spice note without making it spicy.6. Storage
Filling: Store the egg salad filling in an airtight container in the refrigerator.
Filled tomatoes: Filled tomatoes are best served the same day.
Make ahead: Make the filling ahead and fill the tomatoes closer to serving.
