Marinade

Chicken skewers
1pound chicken breastin cubes of 1 x 1 inches (2 x 2 cm)

Instructions
Mix the olive oil, garlic, oregano, dill, lemon juice, paprika, and pepper in a large bowl.
3 tablespoons olive oil, 2 cloves garlic, 1 tablespoon dried oregano, ½ teaspoon dill, 1 teaspoon lemon juice, ½ teaspoon paprika powder, ½ red chili pepper
Add the chicken to the bowl and stir well to coat each piece of chicken with the marinade. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 8 hours.

Thread the chicken fillet cubes onto a skewer, alternating with the red onion segments.

Cook the skewers, turning occasionally, for 5 to 8 minutes until cooked through. The core temperature is between 158–162 °F (70 and 72 °C).

NOTES
1. Variations
You can add bell pepper or cherry tomatoes instead of red onion (or in addition).
Add ½ teaspoon of chili flakes to the marinade if you like spicy.
Herbs: Besides oregano and dill (or instead of), you can also use basil, rosemary, or thyme.
2. Bamboo skewers: When using bamboo skewers, soak them in water for at least an hour. This way, your skewers won't burn during grilling.3. Storage
Refrigerator: Store the skewers uncooked and covered in the fridge for up to 2 days. You can also keep them baked in the refrigerator for up to 2 days (covered with plastic wrap).
Freezer: Make the Greek chicken skewers and store them in a freezer box. Baked or unbaked, they will keep for up to a month. Let thaw in the refrigerator. TIP: put baking paper between the skewers, so you can easily remove them from the freezer box.
