The chicken is seasoned with delicious Mediterranean herbs and then grilled to perfection. The combination of olive oil, lemon juice, garlic, and herbs such as oregano and dill gives the chicken a lot of flavor. Let the marinade do its job well, and make sure that the chicken comes to taste in the refrigerator for at least a few hours (but overnight is also possible).
As a result, the flavors penetrate deeply into the meat, making this much tastier.

And then the fun part. Thread the meat onto the skewers, light the BBQ, and place the skewers on the grill grate. And take a moment to smell the delicious smell of the skewers (am I the only one who likes to smell the BBQ smells so much?).
Turn the skewers halfway through and grill until the meat is done. I serve the skewers with some pieces of lemon and garnish with some fresh oregano.

What do you need for Tender and Juicy Chicken Kebabs - Greek Style?
To prepare this Greek Chicken Kabobs, you require the following ingredients. You can find the correct amounts in the recipe card at the bottom of the blog:
- Chicken breast: For this recipe, I used chicken breast. But chicken breast fillets are, of course, also possible.
- Red onion: has a deep red, almost purple skin, slightly thinner than the skin of a regular onion. It is less sharp in taste. Here it is used in the marinade and roasted crispy on the skewers.
- Olive oil: use extra virgin olive oil with a fruity flavor.
- Garlic: One of the seasonings in the marinade. Raw garlic is spicy, slightly sweet, and aromatic. But after roasting, it becomes wonderfully soft in taste.
- Oregano: It has a spicy aromatic taste and a little spice. It is a herb commonly used in the Mediterranean cuisines of Greece and Italy.
- Dill: A soft herb with delicate needle-like leaves. It has a slightly sweet lemon and vinegary taste.
- Lemon juice: Makes the meat tender and provides a fresh touch of citrus.
- Paprika powder: Has a spicy taste.
- Red pepper: Provides a little spice.
How to prepare Grilled Greek Chicken Skewers

- Make a marinade by mixing the olive oil with squeezed garlic, oregano, dill, lemon juice, paprika, pepper, and red onion.
- Mix the chicken cubes (about 1 × 1 inch (2 x 2 cm)) with the marinade. Cover with plastic wrap and leave to marinate for at least 8 hours (or overnight).
- Thread the chicken onto the skewers, alternating with the onion wedges. If you don't grill them right away, cover them with plastic wrap and store them in the fridge until ready to use.
- Ensure the BBQ is hot and grill the skewers on all sides for 5 to 8 minutes until cooked. When the core temperature is 158 – 162 °F (70 and 72 °C), the chicken is ready and you can eat it.
Serve with some lemon wedges and sprinkle with fresh herbs. Delicious with a homemade baguette, a Greek salad, and homemade tzatziki.

- You can add bell pepper or cherry tomatoes instead of red onion (or in addition).
- Add ½ teaspoon of chili flakes to the marinade if you like spicy.
