Instructions
Preparation
Take the burgers out of the fridge 15 minutes before grilling so they come to room temperature.
4 hamburgers
Tear the basil leaves if they’re large.
½ oz. fresh basil
Mix the red pesto and mayo until smooth.
5 tablespoons mayonnaise,
2 tablespoons red pesto
Grill
Preheat the grill or BBQ until hot.
Cut the burger buns in half and toast the insides for about 3 minutes until golden. Set aside.
4 hamburger buns
Grill the burgers for 3 minutes per side for medium or 5 minutes per side for well done.
Build the Burger
Place the bottom bun on a plate. Add the grilled burger.
Top with two slices of mozzarella. Layer on two slices of tomato.
4 oz. mozzarella,
1-2 tomatoes
Add 1 to 2 tablespoons of pesto mayo.
Sprinkle fresh basil on top.
Place the top bun over it. Repeat for the rest of the burgers and serve right away.
NOTES
1. Variations
Want more veggies? Add arugula under the burger for extra crunch.
Extra flavor? Drizzle the tomatoes with balsamic vinegar or glaze.
Prefer a different taste? Swap red pesto for green pesto.
Low-carb? Skip the bun and serve over a bed of lettuce.
2. Storage:
Refrigerator: Store the burgers for up to 2 days and keep them chilled.
Freezer: Burgers and buns freeze well. Store burgers for up to 3 months, buns for 1 month.
Reheat: Warm burgers in a skillet or microwave. Toast the buns in the oven for crispiness.
