Instructions
Peel the peaches (optional – see tips). Cut into quarters, remove the pit, and cut each quarter into bite-sized chunks (approximately 1 x 1 inch (2 cm x 2 cm)).

Heat a grill pan or BBQ until very hot. Place the peach chunks on the grill and cook for about 2 minutes on each side until caramelized. Remove and let them cool.
On each skewer, place a basil leaf, fold it, and add a half-slice of ham, ending with a piece of grilled peach. Repeat until all ingredients are used.
8 slices Serrano ham, 16 fresh basil

NOTES
1. Storage and make ahead
Make ahead: You can prep everything in the morning. Store the grilled peaches and the ham with basil separately in airtight containers in the refrigerator. Put the skewers together just before serving.
Storage: These are best eaten on the same day.
