Instructions
Make sure all ingredients are at room temperature.
Mix the yolk with the salt, sugar, pepper, and the mustard.
1 egg yolk, ¼ teaspoon salt, ⅛ teaspoon ground black pepper, 2 tablespoons fine granulated sugar, 1 teaspoon mustard
Add the oil to the egg yolk while you continue to beat, first drop by drop and then a little more, until the mayonnaise becomes thicker and reaches the desired thickness. You need at least 1 cup (0.24 l) for that, but probably a little more.
1-2 cups sunflower oil
Finally, stir in the lemon juice.
