2black peppercorns

Preparation
Sterilize the jars (see tips below) and have them ready.
Place the water and sugar in a saucepan. Heat and stir until the sugar has dissolved.
1 cup sugar, 2 ¼ cup water
Turn off the heat and add the spices.
½ cinnamon stick, 2 cloves, 2 black peppercorns, 2 cardamom pods, 2 allspice berries, ¼ teaspoon ground nutmeg
Let the sugar water cool to room temperature.
Wash the figs and remove the stems.

Immerse the figs in the sugar water and let them soak for at least 8 hours (1 night).
Remove the figs from the syrup. Bring the syrup with the lemon juice to the boil.
3 tablespoons lemon juice
Add the figs and simmer for 5 minutes.
Turn off the heat. Using a slotted spoon, remove the figs from the pan and place them in the sterilized jars.
Let the syrup cool for 20 minutes and strain the syrup.
Divide the syrup among the jars.
Cover the jars and store them in the refrigerator.
NOTES
1. Tips for Figs:
By soaking the figs in sugar water overnight, you extract moisture from the figs and give the sugar water a fig flavor.
Figs from Northern Europe are less sweet than those from Africa and are therefore very suitable for this method, which gives them extra flavor.
The figs get more flavorful every day. So it's okay if you make them earlier.
2. Sterilizing jars (2 methods)
You can sterilize the jars by immersing them with the lids in boiling water for 2 minutes and allowing them to air dry upside down on a clean tea towel. When they are dry, turn them over and screw the lid on.
Wash them in the dishwasher in the hot setting (screw the lid on immediately when you take them out).
3. StorageRefrigerator: The figs in syrup can be kept in the fridge for two weeks, provided they are stored in a previously sterilized jar.
