1cupstrawberry syrup
1¼cupwater
3cupsstrawberry ice cream
⅔cupcream
2tablespoonsconfectioners sugar
4strawberries fresh for garnish, quartered or halved

Instructions
Soak the gelatin sheets in cold water until soft.

Heat the strawberry syrup with the water until it almost boils.
1 cup strawberry syrup, 1¼ cup water
Turn off the heat, take the gelatin out of the water, and mix in the strawberry syrup mixture. Stir well with a whisk so no lumps are formed.
Pour the mixture into glasses placed at an angle and chill until the jelly is firm.
About 15 minutes before serving, take the ice cream from the freezer to soften.
3 cups strawberry ice cream
Whip the cream with the sugar until stiff peaks form.
⅔ cup cream, 2 tablespoons confectioners sugar
Add a scoop of strawberry ice cream on top of each jelly.
Pipe or spoon whipped cream on top and garnish with fresh strawberries.

1. Can I use gelatin powder instead of sheets?You can, use 4 teaspoon powder gelatin and bloom in 2 tablespoons cold water. Dissolve it in the hot syrup as you would with the sheets.2. What kind of glasses should I use?Use heat-safe glasses or dessert glasses that can handle warm (not boiling) liquid and fit perfectly in a bowl or tin to hold the angle.3. Can I double the recipe for a crowd?Yes. Double or triple all ingredients and use more glasses. Make sure your fridge has space for all the angled glasses.4. Variations
Mixed berry version: Replace part of the strawberry syrup with another red berry syrup and use a mix of berries on top.
Big bowl dessert: Set the jelly in one large glass bowl instead of glasses and scoop at the table.
5. Storage
Fridge: Jelly alone keeps covered for up to 2 days. Once topped with ice cream and whipped cream, serve right away.
Freezer: Not suitable once assembled; the cream and jelly will change texture.
Serving: Keep the jelly cold. Add ice cream, cream and strawberries just before you are going to serve dessert.
