Ingredients
- 6 sheets gelatin, or 4 teaspoons gelatin powder
- 1 cup strawberry syrup
- 1¼ cup water
- 3 cups strawberry ice cream
- ⅔ cup cream
- 2 tablespoons confectioners sugar
- 4 strawberries , fresh for garnish, quartered or halved

Instructions
- Soak the gelatin sheets in cold water until soft.6 sheets gelatin
- Heat the strawberry syrup with the water until it almost boils.1 cup strawberry syrup, 1¼ cup water
- Turn off the heat, take the gelatin out of the water, and mix in the strawberry syrup mixture. Stir well with a whisk so no lumps are formed.
- Pour the mixture into glasses placed at an angle and chill until the jelly is firm.
- About 15 minutes before serving, take the ice cream from the freezer to soften.3 cups strawberry ice cream
- Whip the cream with the sugar until stiff peaks form.⅔ cup cream, 2 tablespoons confectioners sugar
- Add a scoop of strawberry ice cream on top of each jelly.
- Pipe or spoon whipped cream on top and garnish with fresh strawberries.4 strawberries
Notes
- Mixed berry version: Replace part of the strawberry syrup with another red berry syrup and use a mix of berries on top.
- Big bowl dessert: Set the jelly in one large glass bowl instead of glasses and scoop at the table.
- Fridge: Jelly alone keeps covered for up to 2 days. Once topped with ice cream and whipped cream, serve right away.
- Freezer: Not suitable once assembled; the cream and jelly will change texture.
- Serving: Keep the jelly cold. Add ice cream, cream and strawberries just before you are going to serve dessert.
