It seems still not fall again here in Holland, but it's really coming soon the weather forecast tells us. Temperatures will fall. Not very low yet, but it will be colder. Nice to go for a walk outside, to get some fresh air. And then enjoy a delicious coffee. This Cafe au Lait de Luxe is wonderful after that walk. Hot, creamy, and warming. And very tasty because of the honey/apple syrup. Let the cold weather come.

RECIPE CARD
Ingredients
- 150 ml espresso , or strong coffee
- 50 ml milk , full
- 1 teaspoon apple schnapps
- 2 tablespoons honey
- ⅛ teaspoon cinnamon , ground
Instructions
- Heat the honey and mix the Apfelkorn through the honey.
- Pour this at the bottom of the glass.
- Heat the milk and froth it up.
- Pour it gently on the syrup.
- At last pour in the coffee, very gently.
- Optional: garnish this coffee with a pinch of cinnamon.
Notes
- Experiment because you won't only have to use Apfelkorn but think of other honey-like whiskey-honey. This cafe is also delicious with other syrups;
- If you don't like coffee, syrups are also delicious in a cup of tea or hot chocolate.

Carnival!
Maybe not all of my readers know, but I live in the Netherlands in a small village and here we celebrate Carnival. Not in a big mass, as in the big cities but along with the entire village. It's a real family celebration, where we have a few days to see each other very often and may catch up and laugh.
An yearly tradition is to choose a new prince at the ceremony of the carnival. And this year (tadadada) the prince of our little village is my own husband. Along with a good friend they are the team of this carnival. And besides chat, jokes, they also go to the sick and elderly and special afternoons are held for seniors and the disabled. So I can say that I'm very proud that my husband this year is the new Prince.
