Instructions
Prepare Chocolate Cake
Preheat the oven to 350 ℉. Line the bottom of a 7-inch springform pan with parchment paper. Grease the sides of the pan.
Melt the chocolate with the milk au bain-marie *. Let the chocolate mixture cool for five minutes.
6½ oz. dark chocolate, ½ cup milk
Beat the butter and sugar until light and fluffy for 3 minutes.

Add the eggs one at a time and mix well after each addition. Mix in the cooled chocolate mixture.

Fold in the self-rising flour.

Pour the batter into the prepared pan. Bake for 45 to 55 minutes, until a skewer inserted in the center comes out clean. Let the cake cool completely.
Preparing Kit Kat Smarties Cake
Slice the cake horizontally into 2 layers.
Spread half of the chocolate mousse over the bottom layer. Place the top layer back on.

Spread the remaining chocolate mousse over the top and sides of the cake.

Press the Kit Kats around the sides of the cake. Scatter the Smarties over the top.

NOTES
1. Au bain-marie: a method for heating something so it won't burn. Fill a pan with a small layer of water and suspend a heat-resistant bowl over the water (it must not touch the water). You can melt the chocolate in the bowl.2. Can I bake the cake ahead? Yes. Bake it a day ahead, let it cool completely, and assemble the cake when ready.3. Why does the cake need to be fully cool? The mousse stays in place better, and the cake is easier to slice into clean layers.4. Do I need neat frosting on the outside? No. The Kit Kats cover the sides, so the mousse only needs to be even enough to help them stick.5. How do I stop the Kit Kats from slipping? Press them onto firm mousse and add a ribbon around the cake if needed.6. How do I get cleaner slices? Chill the cake before cutting and wipe the knife between slices.7.
