Lime Yogurt Ice
In a bowl, combine the lime juice, sugar, and vanilla extract. Stir well until the sugar completely dissolves.

Add Greek yogurt and mix until smooth and creamy.

Pour the mixture into small glasses or dessert cups. Freeze for at least 3 hours, or until the mixture is firm.
Raspberry Mint Jelly
Place the raspberries, sugar, and water in a small saucepan.
1 cup Raspberries, 1 tablespoon sugar, 1 cup water
Bring to a gentle boil and let simmer for 15 minutes.
While it cooks, soak the gelatin in two tablespoons of cold water for 5 minutes.

Set a fine-mesh sieve over a clean bowl or pan and pour the raspberry mixture through it. Press with the back of a spoon to extract all the juice.
Heat the strained juice again, but only until hot (don’t boil). Remove from the heat and stir in the gelatin mixture, stirring until fully dissolved.
Stir in the fresh mint and let the mixture cool to a lukewarm temperature.
5 fresh mint leaves
Take the frozen yogurt cups from the freezer and gently pour a layer of raspberry mint jelly on top. Return to the freezer for at least another 30 minutes, or until the jelly has set.
Let them sit at room temperature for 10 minutes before serving for the perfect texture.
Make sure you take out the dessert 10 minutes before serving from the freezer.
NOTES
1. Flavor variations
Raspberry: You can substitute it with strawberries, blueberries, or mango.
Lime: Swap the lime for lemon or orange for a different citrus note.
Tropical twist: Use coconut yogurt instead of Greek yogurt.
