This lime yogurt ice with raspberry mint jelly is a summer dessert dream come true. It's creamy, refreshing, and surprisingly easy to make.
There's no ice cream machine required, and you'll only need a few ingredients: Greek yogurt, lime juice, sugar, and a sweet jelly made with raspberries and fresh mint. It looks elegant, tastes fantastic, and is the perfect frozen treat for any warm day.

No-Churn Lime Frozen Yogurt with Raspberry Jelly
This recipe takes me back to a hot summer afternoon in my backyard. The kis were splashing in the swimming pool, laughter echoing through the the garden. I was relaxing in the shade, and the it was time for a treat.
This lime yogurt ice with raspberry mint jelly was waiting in the freezer. Topped with a beautiful layer of raspberry mint jelly, they looked so cool. And yet they were homemade-and it was so simple!
The tangy lime flavor, paired with the creamy yogurt and sweet minty raspberries, was so good.
Ever since, this recipe has been a go-to for our summer BBQ, summer dinner parties, or whenever I want to serve something cool and delicious.
Tips for This Summer Yogurt Dessert with Berries
- Use full-fat Greek yogurt to get that creamy texture.
- Fresh lime juice gives the best flavor-bottled juice won't taste as vibrant.
- Ensure the yogurt layer is thoroughly frozen before adding the jelly to achieve clean, defined layers.
- Frozen raspberries work just as well as fresh ones.
- Take the dessert out of the freezer 10 minutes before serving to allow it to soften slightly for the perfect creamy bite.

Ingredients
Lime yogurt ice cream
- 2 limes, juice
- ⅓ cup sugar
- 1 teaspoon vanilla extract
- 2¼ cup Greek yogurt, full fat
Raspberries mint jelly
- 1 cup Raspberries, fresh or frozen
- 1 tablespoon sugar
- 1 cup water
- 1 teaspoon gelatin powder
- 5 fresh mint leaves, leafs into strips

Instructions
Lime Yogurt Ice
- In a bowl, combine the lime juice, sugar, and vanilla extract. Stir well until the sugar completely dissolves.2 limes, ⅓ cup sugar, 1 teaspoon vanilla extract
- Add Greek yogurt and mix until smooth and creamy.2¼ cup Greek yogurt
- Pour the mixture into small glasses or dessert cups. Freeze for at least 3 hours, or until the mixture is firm.
Raspberry Mint Jelly
- Place the raspberries, sugar, and water in a small saucepan.1 cup Raspberries, 1 tablespoon sugar, 1 cup water
- Bring to a gentle boil and let simmer for 15 minutes.
- While it cooks, soak the gelatin in two tablespoons of cold water for 5 minutes.1 teaspoon gelatin powder
- Set a fine-mesh sieve over a clean bowl or pan and pour the raspberry mixture through it. Press with the back of a spoon to extract all the juice.
- Heat the strained juice again, but only until hot (don't boil). Remove from the heat and stir in the gelatin mixture, stirring until fully dissolved.
- Stir in the fresh mint and let the mixture cool to a lukewarm temperature.5 fresh mint leaves
- Take the frozen yogurt cups from the freezer and gently pour a layer of raspberry mint jelly on top. Return to the freezer for at least another 30 minutes, or until the jelly has set.
- Let them sit at room temperature for 10 minutes before serving for the perfect texture.
- Make sure you take out the dessert 10 minutes before serving from the freezer.
Notes
- Raspberry: You can substitute it with strawberries, blueberries, or mango.
- Lime: Swap the lime for lemon or orange for a different citrus note.
- Tropical twist: Use coconut yogurt instead of Greek yogurt.
- Freezer: Store in an airtight container in the freezer for up to 2 weeks.
